We invite you to an introductory 3 hour session to discover if making fermented food and drink is something you want to learn more about. We will make a super tasty Central American Sauerkraut called Curtido and teach you how to look after it when you get home. We will also sample some other ferments from our full day course (Advanced Food Preservation Techniques) so you can decide if you want to learn more!  

Fermentation was traditionally a method of storing food but is also commonly used in food production, coffee, wine and chocolate, three of the most consumed products in the world are all fermented during production.  Fermentation is also widely recognised for the health benefits associated with the good gut bacteria Lacto Bacillus which is naturally produced during the fermentation process.

Introducing fermented foods into your diet opens up a whole new range of textures, flavours and health benefits. It’s fun, healthy and tasty!

This is a very relaxed workshop, so come and have some fun.

Fantastic informative course

Had a fabulous time at the fermentation course, got to try lots of different things but loved the fact that the process for each one was explained as well so easy for you to recreate at home. Can't wait for the foraging course!

Fun day

I can thoroughly recommend this course 'Introduction to Fermented Foods'.
The cookery school was easy to find and easy to park.
The half day course was fun and I have learnt a lot of new skills from using knives (safely) to chop ingredients finely to the science behind fermenting foods and their health benefits.
Colin was welcoming, helpful and made it easy to fully participate.
I loved the welcome refreshments - one of which was yarrow, spruce tip and mint tea. It set the tone for Colin's philosophy - healthy nutrition using local ingredients with a known provenance.
This course has given me the enthusiasm to cook more and return for further courses.

A fun and informative morning

I was gifted a wild foraging and cooking course with Colin which I loved, and still use the information & recipes.
So I thought I'd find out a bit about fermentation. The morning was relaxed, but packed with information and tips. We also got to taste many different foods, sauces and drinks. Fascinating and something I will be exploring further.

Great idea

The course, venue and chef were all really impressive. As it turns out, sauerkraut just isn’t for me but I so enjoyed the making and science of it all.
The knives you gave us to use were so sharp and beautifully weighted that I bought one for myself last Christmas and doing the same this year.
Will be back
