 - Powdering

 - Flavouring Salts & Sugars

 - Flavouring Vinegars & Syrups

An absolutely brilliant day.

Having done the Introduction to Fermented Food and Drinks Course I knew it was a natural progression to attend the Advanced Food Preservation Techniques Day. It's actually quite hard to describe the day because it is so very different. The kitchen is full of Colin's veritable food feasts and I can honestly say the day was incredibly informative. Colin is relaxed but professional in his teaching style and I learnt a lot. Lunch was amazing as it naturally incorporated some of his fermented products which tasted lovely. I would highly recommend his courses!


Who knew you could do so much with so few ingredients. Inspiring course left with so many ideas and way more relaxed about starting fermenting than I was.

Advanced food preservation

I booked this course as a Christmas present for my husband. He is very difficult to buy gifts for and I usually find them unused after buying them. This year the Advanced Food Preservation class was a huge success. We now have shelves full of fermenting concoctions that are very good. I hadn’t been a fan of shop bought Kimchi etc but these home made ones are fantastic. He’s happy making them, I’m healthier eating them - I can say it was money well spent 😊

Extraordinary in so many ways

The day with Colin was extraordinary in so many ways. He is a the Ultimate Fermentation Conjuror . The depth of his knowledge and experience is immense. The way he experiments with flavours was a joy and delight to sample.
I would recommend this day to anyone serious about fermenting at home. I came away with so many inspiring ideas on this most enjoyable day. I feel my level of understanding the different methods has increased considerably and I will be more confident in my fermenting adventures. Plus there was a great lunch and excellent company.
