Forage, Cook, Feast: A Seashore Adventure at Ground Up Cookery School

Explore the rich and rugged coastline of South Devon through a full-day experience that blends coastal foraging with hands-on cookery. From seaweed and shoreline greens to maritime herbs and possibly molluscs and shellfish. You will uncover the edible treasures of the sea—and learn how to turn them into something delicious.

Morning: Coastal Foraging Expedition

We begin the day at the water’s edge. You will meet your guide at a local beach, where we will set out along the shoreline to explore the fascinating world of seashore foraging. Learn to identify seasonal edible seaweeds, plants, and maybe even shellfish while gaining essential knowledge about tides, safety, legal considerations, and sustainable harvesting practices.

Along the way, you’ll taste wild coastal flavours and discover how the rhythms of the sea shape what’s available throughout the year. Whether you’re a complete beginner or a curious naturalist, this guided walk will open your eyes to the abundance all around.

Afternoon: Wild Cooking at Ground Up Cookery School

Back at Ground Up Cookery School you will turn your coastal finds into a shared feast. You’ll be welcomed with refreshments before heading into the kitchen for a fun and informative, hands-on cooking workshop.

Working in pairs or small groups, you’ll prepare 2–3 dishes using the day’s foraged ingredients. Along the way, you’ll pick up practical skills, new recipes, and cooking techniques designed to make the most of wild coastal produce. The session is tailored for all experience levels—no need to be a professional cook to create something special.

We will finish the day around the table with a shared meal and a glass of wine, celebrating the coast’s natural bounty. Don’t forget to bring a container—there may be extras to take home.

Every course is shaped by the tides, the weather, and the season—so each one is unique. Come and reconnect with the wild, learn something new, and savour the flavours of the sea.

 

What to Bring


Sturdy footwear (walking boots or wellingtons), weather-appropriate clothing, and a container for leftovers. The foraging walk includes uneven, wet, and rocky terrain—please contact us in advance if you have accessibility concerns so we can discuss options.

Schedule of the day 

9:30  Meet at designated location in the Dawlish area  (exact details provided prior to attending). Guided coastal forage: identification, sustainability, and tasting

Return to Ground Up Cookery School (approximately 20 - 30 mins drive) for refreshments and introduction to the afternoon.

Guests to cook dishes in pairs (2 or 3 recipes per team) using wild ingredients

Finish dishes and serve and eat together, discuss dishes and ingredients. Q&A.

Please note

This course will take place on a variety of terrains. If you have any concerns about accessibility please feel free to contact us to discuss. We have a variety of options available and would very much like to make this course accessible to as many people as possible. We recommend that you wear walking boots or shoes and bring wellingtons and wet weather gear with you just in case.

Seashore foraging course

I had a fantastic and very informative day with Collin, absolutely eye opening finished off with a delicious spread cooked up by ourselves.
Great kitchen and facilities plus coffee and biscuits with a little mead thrown in for good measure.

Foraging fun 😁

Had a wonderful day on the cookery course.
We'd barely left the car park and were shown more species than you could've imagined. The shoreline was a complete eye opener.
Colin's obvious enthusiasm for the subject shone through and really cemented the enjoyment of the course.
Colin's kitchen and larder was an inspiration for further foraging investigations. The recipes prepared and eaten at the school were an excellent end to a brilliant day. I highly recommend this course if anyone is curious about expanding their foraging experience.

Excellent day of foraging, learning and cooking

I loved this day, the foraging was so interesting, Colin was great at explaining the abundance of edible plants in a small area. Back at the cookery school Colin talked us through his array of foraged and fermented produce, lots of tasting of his ingenious creations and then we all cooked a delicious meal together! Great space, beautiful surroundings and Colin is a really engaging leader. Already plotting my next visit!
