Description

Join us at The Ground Up Cookery School and create a range of tasty food and drinks using foraged, seasonal and local ingredients. Based within the beautiful Dartmoor National Park in the heart of Devon, this two-part course begins at the school for refreshments before departing for a guided walk. We will assist you in identifying and collecting a range of seasonal fruit, nuts, leaves, roots or fungi to take back to the Ground Up Cookery School Kitchen for the second part of the day.

The afternoon will be spent cooking some amazing dishes. You will learn general skills as well as specific delicious recipes, to replicate at home. No prior experience is necessary, however if you are an experienced cook, you will have the opportunity to push yourself further.

We will taste all the dishes on the day, but bring containers as there will be the opportunity to take some home to share with your friends and family!

The course content will vary with the seasons, no two dates will be the same.

Schedule of the day 

9:30  Arrival and introductions
10:15

Travel to start point (walking or car, max 15 minutes) for walking tour, identifying key species, seasonality and sustainability

12:30

Return to Ground Up Cookery School for refreshments.

13:30

Guests to cook dishes in pairs (2 or 3 recipes per team) using wild ingredients

15:30

Finish dishes and serve and eat together, discuss dishes and ingredients. Q&A.

16:00

Wrap up- handouts for guests containing field guides and recipes.

Please note

This course will take place on a variety of terrains. If you have any concerns about accessibility please feel free to contact us to discuss. We have a variety of options available and would very much like to make this course accessible to as many people as possible. We recommend that you wear walking boots or shoes and bring wellingtons and wet weather gear with you just in case.

Foraging course

A fabulous day spent learning about herbs and greens right in front of you. We all made one dish which highlighted foraged ingredients and finished off eating a feast together. Thoroughly enjoyed it!

Wild Foraging and Cookery

I have wanted to do the foraging course ever since I did my first day at the GUCS a few years prior. Finally did it this summer and it was perfect.

Hugely knowledgeable and interesting, equal parts complex cooking and food design as well as simplicity to suit all levels of cooking. I learnt a huge amount and have enjoyed pulling food put of the hedges near our house ever since.

Great value, great food and really good fun. 100% recommended.

Brilliant

We were a group of four and split into two teams from the off! Boys v Girls.. we had so much fun trying all the different items literally plucked from the hedgerows, Colin has so much knowledge to share and managed to put it on a level for all to enjoy. We were treated to sampling many of his fermenting jars and also his rather lovely homemade alcohol, the honey vodka was delicious.
We met some lovely people and to sit down after all spending time using foraged ingredients to add to and make delicious dishes we all enjoyed what we had created.
Thanks again, we will be back.

Claiming back the knowledge of our great grandparents

Was so much fun. Colin is really natural teacher and while I had a bit of knowledge from my granny, it was not until after this course that I felt confident to go out picking with my children. The world of wild food is epic and amazing and tasty too! Get involved, learn if only to share with the next generation!

To top it off we made some really wonderful food and met like-minded people which is always a treat!

Let's face it, nothing is ever perfect and although this was fab, i have to follow the rules. Open, friendly, inviting, this well sorted course was a great gateway event into a whole new thing. very much enjoyed it and Colin and the poor washer-up were on top of everything and it was a lovely time.
