This day really exceeded our expectations. Colin was a great host - knowledgable and entertaining - and we learned so much on the walk, including that many of the plants we had considered as weeds in our gardens were in fact edible! We were then able to put this into practice in the practical cookery session, in which we received just the right amount of guidance to allow us to experiment but not go too far astray. The day then was then rounded off beautifully by enjoying a glass of wine and the fruits of our labours!
All really interesting and stimulating, and highly recommended.

This was a really well run course, Colin was very knowledgeable and took the time to pass on this knowledge to us all walking us through the beautiful local countryside explaining the various do's and don'ts.
It was great to then spend the time turning the ingredients into food and lovely to sit and eat it together with all the other participants of the course.
The school is very well equipped, tastefully decorated and the contents of Colin's 'larder' provide an inspiration as to where your foraging journey might take you!

Well, what an experience we had and Colin was such a hospitable host along with his knowledge and easy personable welcoming manner all the way through our fabulous alternative day. Also a big thank you to Tasha from booking a big surprise for my hubby Paul on the quiet 🤫 and assistance during the cooking process afternoon, along with your amazing polite son that cleared up after us all 👏🏻😊 Just also would like to thank Colin for the care and attention with his knowledge of Paul's knee condition walking for any assistance if required. This needles and cones spotlight did not disappoint. It was on a lovely sunny day whi h made the dreamy location even more wonderful. I was greeted at the door by Colin who was very friendly and I met the other attendees and was offered a glass of wine to start the class off, i declined as i was driving but the sprice water and tea were super refreshing! The group was small which was great as you could ask as many questions as you wanted and see everything being demonstrated. The jars of ferments, preserves and concoctions were very inspiring, it was like a real treasure trove! The class itself was very informative and fun with lots of demonstrations, information and tastings too. I tried candied pinecones for the first time and the most incredible sherry vinegar!
The lemon posset was delicious and seeing the variety of savoury and sweet applications made me want to head straight to the woods and get picking spruce tips!
I will be looking out for the next spotlight series, such a great way to spend a Friday evening,learning about a new ingredient and being with passionate foodie people. Highly recommend.
